Step 01

Mise en place

Everything on the board before the heat goes on. Six tomatoes, one onion, two cloves of garlic, a bunch of basil. Nothing else reaches the counter — that is the whole discipline of the first evening.

Step 02

Knife work

Claw grip, knuckles guiding the blade, the tip never leaving the wood. Onion first because it waits well, tomatoes last because they bleed. The overhead camera is here for exactly these ninety seconds.

Step 03

Weigh & season

Grams, not handfuls. The scale is tared with the bowl already on it, then salt goes in at nine grams per kilo of tomato. Written on the card, said out loud, shown on the display above your station.

Build the sauce

Oil, onion, a pinch of salt to pull the water out. Garlic only when the onion is already soft, tomatoes when the garlic smells sweet. Order is the recipe; the ingredients are just the shopping list.

Simmer & taste

Forty minutes at a lazy bubble, lid ajar. Taste at ten, at twenty, at forty — three spoons, three different sauces. You write down which one you want, and that is the version on your recipe card.

Plate & share

Warm bowl, sauce first, pasta folded in, herbs torn on top by hand. Then everyone sits down at the long table and eats what they cooked — that part is not optional, and it is why the class runs three hours, not two.

Evening one · the house rub

Three jars, one blend

The first thing every student mixes is the house rub. Move a share and the other two rebalance, because a blend is a whole: the jar is always 100 grams and the numbers underneath change with it. This is the same panel we put on the wall screen during the class.

Salt above 55% and the rub stops being a seasoning and starts being a cure — good for a shoulder that sits overnight, wrong for a weeknight vegetable. Herb above 45% burns before the crust forms. We say this out loud in week one so nobody has to learn it from a ruined tray.

Who is teaching

Three chefs, one long table

Nobody teaches a class they do not cook at home. Between them they have run the school's bench since 2017 — and they answer their own email.

Everything here is on the bench in front of you, not behind a rope. You cook on the equipment, you clean it down at the end, and that is part of the class.

Allergens & dietary needs Tell us when you book and we build your station around it. Every class has a nut-free, gluten-free, dairy-free and vegetarian route written before the evening starts — you cook the same dish, not a substitute. Sesame, celery, mustard, egg and fish are handled in a separate prep room with its own boards and pans, and the whole kitchen is cleaned down between classes. If your allergy is severe, call us on +1 555 0148 before booking so a chef can walk you through the room.

Before you book a seat

None. Around half of every class has never used a chef's knife properly, and the first twenty minutes of any course is grip, board height and how to stand. If you already cook, say so when you book and we will put you on a station with the harder prep.

Write it in the booking form and it reaches the chef teaching that evening, not a mailbox. Every class has nut-free, gluten-free, dairy-free and vegetarian routes planned in advance, cooked on separate boards and pans in our allergen prep room. For a severe allergy, call +1 555 0148 first — a chef will walk you through the kitchen before you commit.

Free up to 72 hours before the class, either online or by phone, with the money back the same week. Inside 72 hours the seat becomes transferable: send a friend, a colleague or anyone else and there is nothing more to pay. Gift certificates are refundable in full for 14 days.

The food you cooked, boxed up, plus a printed recipe card with the version you tasted and chose — and the same card by email that night. Course students also get 20% off the pantry shelf while they are enrolled, which is where the house rub, the flour and the olive oil live.

The entrance is step-free from the street and one bench drops to 74 cm for seated work, with the overhead screen angled to match. The long table has two removable chairs. Tell us in the form and we will hold that station for you — it is the one nearest the door and the sink.
