A narrow room, two ovens, one long marble bench
SUGAR & SALT opened on Powdermill Street in 2016, in a shop that had sold buttons for forty years. The counter is the whole shop: nine metres of glass, the bench behind it, and two ovens that start at four in the morning.
We keep the range short on purpose. Six cakes, five pastries, one pairing of buttercream a day — that is what two bakers and a pastry chef can make properly before the door opens.
Nothing is frozen and nothing is bought in. If a cake is gone by two in the afternoon, it is gone; we would rather sell out than bake a second batch in a hurry.
What we will not do
- Fondant sculptures. We do not have the hands for them and we would charge you for the learning.
- Next-day tiers. A stacked cake needs a night of rest or it leans by the time it is cut.
- Copies of another bakery's cake. Bring the photo as a direction, not as a brief.
